Broccoli and Pumpkin Pasta
500 g Pumpkin, peeled, cut into 3cm cubes
Australian Extra Virgin Olive Oil Spray
200 g Cherry Tomatoes
300 g Penne Pasta
300 g Broccoli, cut into florets
50 g Baby Rocket Leaves
100 ml Coles Simply Less Balsamic Honey Mustard Dressing
Cracked pepper to serve
1. Preheat oven to 220ºC or 200ºC fan forced. Line a large baking tray with baking paper. Place pumpkin on tray and
spray with oil. Bake for 20 mins. Add tomatoes and bake for a further 10 mins.
2. Meanwhile, bring a large saucepan of water to the boil and cook pasta according to packet directions. Add broccoli to the
pan for the last 3 mins of cooking. Drain pasta and broccoli well and return to saucepan.
3. Toss pumpkin, tomatoes, rocket and dressing through pasta. Serve in large bowls and season with cracked black
